Summer Tacos
2 cups butternut squash- cubed
1 tbsp honey
olive oil
8 ounces black beans
feta cheese
8 corn tortillas
Heat oven to 400 degrees. In an oven safe dish
mix cubed butternut squash with a tbsp of honey and
drizzle with olive oil - cook in oven for 20 - 30 minutes
- While squash is cooking - heat black beans
- Lightly coat a pan with olive oil to heat up corn tortillas
Once squash has a soft texture smash and mix in black beans
assemble your taco and sprinkle with feta cheese
- additional ingredients if desired - salsa Verde and sliced avocado - serve with a side of white rice topped with butter and black pepper
